Calling all vegetarians, vegans, and curious omnivores! Today, we're making delicious and easy lentil patties that are perfect for lunch or dinner.

We'll start by soaking our lentils for 2 hours. This makes them nice and soft for the patties. 

While the lentils soak, we'll chop up our veggies. We've got onion, garlic, carrot, and fresh parsley for added flavor 

Now, it's time to combine all the goodness! Lentils, chopped veggies, a spoonful of tomato puree, and some basic spices go into the food processor. 

Give it a good pulse until everything is well combined. Don't worry if the mixture seems a little sticky, that's perfectly normal 

Now comes the fun part! Scoop out some of the mixture and form them into patties about ½ inch thick.
