Gather Your Ingredients
– 2 cups heavy cream– 1 vanilla bean (or 1 teaspoon vanilla extract/paste)– 5 large egg yolk– ½ cup sugar– Pinch of salt– 6 (4-ounce) ramekin– Hot water– Granulated sugar (for caramelizing)– Kitchen torch (optional)
Preheat your oven to 300°F
In a saucepan, heat the heavy cream with the vanilla bean (seeds scraped in) or extract/paste until simmering. Remove from heat and let steep for 10 minutes.
Slowly whisk the hot cream mixture into the egg yolk mixture to temper the eggs
