This recipe is perfect for a comforting and flavorful weeknight dinner.

If your cottage roll comes wrapped in netting, you can leave it on for now. Place the cottage roll in a roasting pan. 

Pour the vegetable broth into the pan. Add the potatoes, onion, garlic, bay leaves, and peppercorns. 

Preheat your oven to 325°F (163°C). Add the baby carrots to the pan and toss everything together 

Once cooked, remove the pan from the oven and let the pork rest for 5 minutes.
